This chocolate palette is made from unusual cocoa beans. Peruvian Pure Nacional cocoa, believed to be extinct since 1916, grows naturally in the heights of the Marañón Valley at the northern end of the country.
These hybrid beans with white and purplish colors require special attention during our gentle and slow roasting to produce a clear-looking chocolate with notes of honey and blueberries.
