with coriander & jaggery
Pickles and jams preserve a history of flavors and ingredients. This is particularly true of our Carrot and Fruit Conserve with Jaggery & Coriander, originally called “lagannu achar”, named after the celebration where it is historically eaten, the wedding. The plump fruits and the plethora of spices are pricey so this unctuous conserve was reserved for special occasions.
The tradition of incorporating dried fruits with fresh produce for sweetness is distinctively Persian, while jaggery is indigenous to India. The harmonious coupling of these two ingredients is much like the experience of the immigrant community that fled persecution from the Arab conquest of Persia between the 8th and 10th centuries and settled in Gujarat, where they quietly assimilated into the local community.
